Nourishing Recipe: The 20-Minute Fresh & Frozen Veggie Skillet
Eating well on a budget means filling our bodies with vibrant ingredients. Using fresh and flash-frozen options gives you the highest nutrient count without a high price tag. Modify this recipe based entirely on what is accessible to you this week.


• The Base Ingredients: 1 can of rinsed black beans, 1 cup of fresh or canned diced tomatoes, 1.5 cups of frozen or fresh sweet corn, and 1 diced fresh bell pepper.


• Protein Modifications: If your budget allows or if you have leftover shredded chicken, ground turkey, or sliced sausage in the fridge, dice it up and toss it right into the skillet to stretch your meal even further.


• Affordable Substitutions: If fresh bell peppers are too pricey, use a bag of frozen mixed pepper strips. If brown rice is not in the pantry, white rice, quinoa, or baked potatoes work perfectly as a base.


• The Method: Heat a splash of cooking oil in a skillet. Sauté your pepper and any uncooked meat until tender. Add your tomatoes, corn, black beans, and any pre-cooked leftover meats. Season with garlic powder, cumin, salt, and pepper. Let everything simmer together for 10 minutes until hot. Serve a generous scoop over your favorite cooked grain.

FOOD RESOURCES

 The Salvation Army (Summit County Area): Offers a Red Shield Choice Pantry along with free hot weekday lunches served across multiple community center sites. Located at 190 S. Maple Street. Please call 330-762-8481 ahead of time to verify specific pickup eligibility and hours.


• Good Neighbors Inc. (Goodyear Heights Center): A volunteer-run pantry open Monday through Thursday from 12:00 PM to 3:00 PM. Located at 1453 Goodyear Boulevard. Neighbors can access fresh groceries, clothing, and household aid.


• Good Samaritan Hunger Center: Runs consistent neighborhood food distributions across Akron. Their primary food assistance program distributes bags of groceries, fresh fruit, and vegetables with no pre-registration required. Call 330-864-8520 to check their mobile pop-up dates this month.


• Heart 4 the City Food Pantry: Located at 954 Eastland Avenue. They are open every Thursday to support neighborhood families. On the 1st Thursday of the month, hours are 9:00 AM to 11:00 AM; all other Thursdays they are open in the evening from 5:30 PM to 6:30 PM.


• Gennesaret Inc. Nutritional Center: Located at 419 W. Exchange Street in Akron. They operate an active emergency food pantry program alongside their hot meal services to ensure local families have immediate access to healthy groceries. Please call 330-253-3336 to confirm current weekly food bag pickup times.

💡 Local Life Hack: The Free Culture Pass Did you know your local library card can get you into major Akron attractions completely for free? Through the Akron-Summit County Public Library Culture Pass program, you can check out free admission passes just like a book! You can get completely free entry into landmarks like Stan Hywet Hall & Gardens or the Akron Art Museum. Check them out on a first-come, first-served basis at local branch desks.


• Central Akron: Akron City Festival Youth Showcase. Come out to support and celebrate the brilliant young talent of our city, featuring live youth performances in music, dance, fashion, and ballet. Held at the Akron-Summit County Public Library Main Library (60 S. High St.) on Saturday, September 5, 2026, from 11:30 AM to 5:00 PM.


• West Akron: The Quiet Space at Kenmore Branch Library. A beautiful, sensory-inclusive space designed specifically to let you take a break from the noise of the world, sit in a calming environment, and rest your mind. Located at the Kenmore Branch Library (969 Kenmore Blvd) on Friday, September 4, 2026, at 6:00 PM.


• North Akron: International Day of Peace Celebration. A vibrant, free outdoor festival celebrating unity and diversity with multicultural food, live performances, and local community awards. Held at the North Hill Community Development Corporation People's Park (760 Elma St.) on Saturday, September 19, 2026, from 11:00 AM to 3:00 PM.


• South Akron: Back to School Night. Perfect for a wholesome family evening to kick off the new school year, offering free hot dogs, craft activities, a prize wheel, and helpful resource information. Held at the Firestone Park Branch Library (1486 Aster Ave.) on Tuesday, September 8, 2026, from 4:30 PM to 5:30 PM.
